{ Healthy Autumn Recipes }

Autumn is officially here!  With the changing leaves comes bonfires, apples, crisp weather, comfy outfits, football, candles and of course..pumpkins!!! We are pretty much craving all things that come along with this season...including all the sweets! 

 Even though we are pumpkin obsessed, we don't want to forget about all of our healthy eating habits we have built up all year. So in an effort to satisfy our pumpkin sized sweet tooth and stay in an acceptable calorie range.....we have compiled a list of some of our favorite healthy versions of timeless fall favorites! Grab your aprons & lets get to baking!

First up is PSL.... we are so impressed with Detoxtinista's healthy version on this Autumn classic!

HEALTHIER PUMPKIN SPICE LATTE:

  • 1 cup homemade almond milk
  • 1 cup hot brewed coffee
  • 2 tablespoons pumpkin puree
  • 2 tablespoons pure maple syrup, or stevia to taste
  • 1/2 teaspoon pumpkin pie spice

One of my favorite snacks for an easy on the run choice, post workout, or afternoon pick me up is raw energy bites... So finding the pumpkin alternative on Paleo Grubs was quite the big deal!  These will be sure to satisfy your sweet tooth while giving you lasting energy! 

PUMPKIN PIE ENERGY BITES:

  • 1 cup pitted Medjool dates
  • 1/2 cup pecans
  • 1/3 cup pumpkin puree
  • 1/4 cup unsweetened coconut flakes
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • Pinch of salt

Last but not least, Pumpkin Coffee Cake!  Would it really be Fall without warm coffee cake with a PSL on a cozy Saturday morning?  I love this paleo version of my favorite Autumn breakfast from Jay's Baking Me Crazy. 

PALEO PUMPKIN COFFEE CAKE: 

  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 cup canned pumpkin
  • 4 eggs
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt

CRUMB TOPPING: 

  • 1/4 cup coconut flour
  • 1/2 cup almond flour
  • 2 tablespoons coconut sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons maple syrup
  • 2 tablespoons coconut oil
